Easy Appetizers - Summer Salsa

 (from my friend Kathy Brown)


Mix these ingredients together in a large bowl:
1 can shoepeg corn drained

1 can black eye peas drained

4 roma tomatoes diced

1 avocado diced         

1 bunch cilantro chopped

5 scallions chopped


dressing - mix together and pour over the vegetables and beans. 

1/3 cup olive oil

¼ cup vinegar

1 clove garlic pressed

cayenne pepper to taste

salt & pepper to taste
Stir all ingredients together, and serve cold with chips to dip!
